Art of Making Matcha
Matcha is finely ground powder of specially grown and processed green tea leaves. The creation of Matcha is 2 way process: the green tea plants are grown in shade for 2-3 weeks before they are ready for harvesting. During this period the plant turns into dark green color due to reduce sunlight and produce more theanine and caffeine. Only the finest tea leaves are handpicked for making the powder. These leaves are then dried up and stone ground to fine, bright green and talc like powder known as Matcha. Grinding Matcha is slow process because the mill stone must not get too warm otherwise the taste and aroma of Matcha will get altered. The flavour of matcha is dominated by amino acid. The highest grades of matcha have more strong pleasantness and deeper flavour than the standard grade matcha. The powdered form of matcha is consumed differently from tea leaves or tea bags, and is dissolved typically in water or milk. Matcha can be usually categorised into three grades:
Ceremonial grade: This is the highest quality used mainly in tea ceremonies and Buddhist temples. This is stone ground into a powder by granite stone mills. It is high quality and expensive. The regular matcha drinker will notice large difference between this type and other grades of matcha tea.
Premium grade: This is second grade of Matcha powder. It is a high quality matcha green tea that contains the full of nutrients and uses tea leaves from the top of the tea plant. Generally matcha is prepared in 2 ways
